But I have to tell you that bottled juice just doesn't cut it if you compare it to fresh; the taste is completely different. Instead of juice being the only ingredient, the listed ingredients are water, concentrated lemon juice, sulphites and lemon oil.
But cutting into a lemon is a pain, if you just want a teaspoon or so of juice. I can just hear you. . . So here's how to use a lemon without cutting it, and so you can squeeze it onto your fish, salad or whatever, while knowing it is just juice!
Jab a fork into a fresh lemon. Squeeze the small amount you want, rub the jab holes with butter, and replace the lemon into the fridge.
It's baking 101, so you need to heat your oven to 400F. Now find a cookie sheet, or some heat-proof flat thing to bake on.
1 squeeze of lemon juice
Some feta cheese
Some ricotta cheese, enough to mix with the feta, to make a soft paste.(It usually takes about 4 tablespoons of ricotta.)
Mix the above 4 things together then put the mixture aside.
1 asparagus bundle, preferably thin ones.
1 frozen Puff pastry package.
Roll out the pastry after defrosting it overnight in the fridge.
If you happen to have a rolling pin, that's useful for future baking. If you don't, an empty wine bottle works well. If it isn't empty, this is the time to remedy that. it will look like a thin oblong - not very exciting at all.
Put it on your baking sheet.
Take a sharp knife, and with the tip, mark carefully all around it, about 1" in from the edge, and not cutting all the way through!
Pop it in your heated oven for 15 minutes.
You will see, to your amazement, the whole thing has risen in beautiful, flaky layers. Take it out of the oven, remove the centre part leaving a layer at the bottom for the filling to go on.
Now put the cheese filling on.
Arrange the asparagus nicely on the top - it's sort of pizza-ish!
Bake until the filling is set, and the pastry is golden brown.
