The recipe that follows is a favourite of mine, especially when having guests for brunch. Pair them with anything you like, and you will have raves!
Waffles can be fiddly things to make. There's the matter of usually having to separate egg yolks and whites, then you need a beater to beat the whites, and of course, you fold them in very carefully (meaning use a large metal spoon, stirring delicately in a figure eight motion.) Well, that alone is enough to put the recipe at the bottom of the round file of any self-respecting bachelor/ette. |
You'll also need a mixing spoon and a big bowl. That's it for the equipment part.
Ingredients and method
- 3 ounces of melted butter
- 2 Tbsp real maple syrup
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 2 large eggs (warm them by placing them into a cup of hot tap water for a few minutes, before using them)
- 2 cups all-purpose flour
- 1 1/2 tsp instant dried yeast--find it in your grocer’s spice section
You only need to combine these ingredients - you don't have to beat them together.
Make sure your bowl is big enough to allow the mix to double in size. Cover the bowl with plastic wrap, or whatever you have that will do the job, then leave it to stand for an hour. If you want your waffles right away, cook them in your preheated waffle iron, usually about 6 minutes, or until you don't see any more steam coming from the waffle iron.
