As technology leaps ahead of us in our daily lives, you have to wonder if there’s any way it will reach an end-point. Incredible inventions surround you every day. For instance, you no longer need to mop floors or vacuum them.
A robot will do that for you. Not only that. It will do it more thoroughly than I could ever hope to accomplish. It will not show disapproval of wayward crumbs or dust bunnies. |
For many years I have developed a fascination with noticing how technology continues to invade the worldwide daily diet. Folks, it’s all in the name of business! That translates to money!
Breakfast, lunch or dinner, the scientific guys have you covered. Food is necessary to all humans. Just like your vehicle needs gas, food becomes your fuel to keep on living.

Breakfast Bites!
Some things just naturally seem to come to pass. I usually have one medium-size zucchini in the fridge. A few simple ingredients, some hand mixing, and you end up with some small, packed-with-goodness, almost muffins. A five-year old could do this!
You need a silicone small muffin pan. If you don’t have one you’ll need to use a baker's spray-on regular small muffin pans. Or, you can actually make the mix into small balls and bake them on a sheet pan.
Zucchini Breakfast Bites
The last two are usually less expensive. Grating it yourself is so much better than buying bought grated. Always check out labels on ready grated even if you don’t really like doing that. It doesn’t melt the same, as “they” have to put stuff in it to keep the gratings separate. Measure and put aside.
2. Grate 1 medium Zucchini.
Yeah, the whole thing, no peeling, onto a clean kitchen towel. You want about 2 cups of the grated Zuke. Squeeze the zucchini in the towel until it doesn’t release any more liquid. The cheese and dried zucchini go into a medium-size bowl.
3. Now add the following:
⅔ cup fine breadcrumbs, NOT Panko, and use non-gluten if you need to.
½ teaspoon baking soda, NOT baking powder.
2 large eggs
2 Tbs chopped chives
1 Tbs chopped parsley
Hot sauce to your taste or leave out.
Pinch of salt and pepper
Small bits of cooked meat for extra protein, if desired.
4. Mix everything together really well
Leave for 30 minutes.
5. Portion into 12 greased muffin cups
Or if you prefer, make little balls with the mixture and put on a non-stick baking sheet.
6. Bake until golden brown in 375° oven
They are delicious!
Technology has produced a vast array of amazing and useful products. You see them and use them every day. The idea of personal computers seemed like a far-off dream just a relatively short time ago. Now we go into panic mode if our smartphone isn’t available at all times!
But do you have the courage to start actively looking at the food you’re eating?
So here’s a simple start-off point that might just set you on a path to keep healthy or regain your health:
- Read those food labels
- A calorie is not necessarily a calorie in today’s food.
- Instead, read the carbohydrates and divide by the fibre. You’re looking for a result of about 6 or below. Just sayin…
- Food is expensive these days. But you will always get the most value out of fresh vegetables and fruit.
It’s always interesting to see how concerns develop. In 2016 I wrote here about similar concerns I was feeling.
Let’s just say, food-related diseases such as obesity and diabetes II are on a world-wide huge upswing. The food you prepare and eat can make a very big difference to your quality of life.
