Did you know that pizza is eaten regularly by 94% of all Americans?
That 61% of Americans prefer thin-crust pizza? That Moose's Tooth Pub and Pizzeria (in Anchorage, Alaska) sells $6 million worth annually? The way I get a piece of that pie is to always have on hand what is needed for toppings. Then, I make a fabulous crust, better than any others I've tasted. |
This one will, I promise! But only if you want the same thing as me. To satisfy me it must be homemade, and very simple for anyone to do! And it must save a bundle of money!
It must be lastingly crisp on the bottom after baking.
If this is the kind of pizza you want, just follow this simple recipe. I guarantee you've never had a better one!
Let's get cooking!
- 2 cups all-purpose flour
- 1 cup semolina flour (small packages in your grocery store)
- 1 teaspoon salt
- 2 teaspoons instant dried yeast
- 1/4 cup olive oil
- 1 1/4 cup slightly warm water
Have a flat baking sheet (or pizza baking stone) ready with a sheet of parchment paper on it, so your masterpiece doesn't stick.
Mix everything together with a wooden spoon. It will be a bit sticky.
Put the dough on the counter, and knead with your fingers until it becomes smooth and supple. Only takes a couple of minutes with this dough.
Place the dough in a bowl with enough room to rise until double.
This quantity makes 2 large pizzas. Take half, and store it in the fridge for as long as a week.
Press out the remaining dough from the centre to the outside.
I put mine on parchment paper, then slide a cookie sheet under it.
If you have a rolling pin, roll out in a circle, preferably on a piece of parchment paper.
It should be about 14" round. Don't worry if it isn't perfectly round, just call it "rustic."
Add whatever toppings you want, but without loading it up too much because this is a thin-crust pizza and won't easily tolerate a heavy topping.
