The original cooked chicken gave us two meals with vegetables, two salads, and two sandwiches. The remainder of the meat is what was separated and will be used for the soup tonight. I know this sounds gross to the vegetarians among you, but, in keeping with a charming habit I learned from a clergyman some years ago, I did offer thanks to the chicken for giving its life so we could eat.

Many studies have concluded North American homes waste 40% of the food they buy. That translates into some interesting figures. It means a family of four can lose more than $2,000 per year in uneaten food. In the United States, households toss out roughly a quarter of all the food they buy.
One of the worst things about discarding food is that the huge amount discarded every year goes into landfills. And no, it doesn't compost there. It's suffocated, usually in plastic bags, and by the sheer weight of the stuff on top of it. Because there’s no air in that anaerobic environment it gives off a huge amount of methane gas. About 20 per cent of Canada's methane emissions (a greenhouse gas that traps more heat in the atmosphere than carbon dioxide) come from landfills.
